A delivery of Fairtrade Molasses was inspiration enough for Wendy (a Suma customer) to get baking, and use the molasses in her idiot-proof, fat-free tea loaf. She has sent us the recipe to share with you. You can vary the flavour by adding mixed spice/cinnamon/ginger to taste.
Ingredients
- 1 lb mixed fruit soaked in 1/2 pt cold tea overnight.
- Next day add 3/4lb self raising flour
- 1 free range egg
- 2 tbs Fairtrade Molasses
Method:
- Mix well together
- dollop into a 2lb loaf tin
- and cook at 170/180 degrees (depending on your oven) for about 1 hour.
