As an example of the wonderful vegan delights in the book, here’s their recipe for Rose and Blueberry Muffins. This recipe takes about 30 minutes and makes 4 muffins.
Ingredients
Rose Blueberry Muffins
Dry ingredients
- 100g whole rice flour
- 40g arrow root
- 1 teaspoon of guar gum
- 12g baking powder
- 4 pinches of sea salt
Wet ingredients
- 240g ripe banana
- 80g blueberries
- 2-3 bags of Yogi Tea Rose
- 40g (2 large ones) medjool dates without the pit
- 4 tablespoons of rice syrup
Method:
To make the Rose Blueberry Muffins
- Combine the dry ingredients in a bowl
- Mash the banana and add the contents of the tea bags
- Add remaining wet ingredients to the dry ingredients
- Stir well
- Place mixture in a muffin tin
- Bake in a preheated oven at 180°C for 25 minutes
- Remove from oven and allow to cool
