Yogi Tea Rose Bluebery Muffins

As an example of the wonderful vegan delights in the book, here’s their recipe for Rose and Blueberry Muffins. This recipe takes about 30 minutes and makes 4 muffins.


Rose Blueberry Muffins

Dry ingredients

  1. 100g whole rice flour
  2. 40g arrow root
  3. 1 teaspoon of guar gum
  4. 12g baking powder
  5. 4 pinches of sea salt

Wet ingredients

  1. 240g ripe banana
  2. 80g blueberries
  3. 2-3 bags of Yogi Tea Rose
  4. 40g (2 large ones) medjool dates without the pit
  5. 4 tablespoons of rice syrup


To make the Rose Blueberry Muffins

  1. Combine the dry ingredients in a bowl
  2. Mash the banana and add the contents of the tea bags
  3. Add remaining wet ingredients to the dry ingredients
  4. Stir well
  5. Place mixture in a muffin tin
  6. Bake in a preheated oven at 180°C for 25 minutes
  7. Remove from oven and allow to cool
