This sauce is very easy to make; even our lamest, most awkward Suma Chef, and part-time model, Pastry Paolo was able to make it under my careful instruction.
Ingredients
Satay Sauce
- 150g peanut butter
- 1 tbsp Tamari soy sauce
- 1 tbsp agave syrup
- 1 tsp dried chilli flakes
- 1 tsp fresh grated ginger
- 1 clove garlic (crushed)
- 1 tsp Worcester sauce
- ½ tbsp olive oil
- 1 tbsp fresh chopped corriander
- 150ml coconut milk
- 1 lime, juiced, with some of the zest added
- Salt and Pepper
Method:
To make the satay sauce, simply blend all of the ingredients together, adding the coconut milk, lime juice and seasoning last.
Ingredients:
Roasted Tofu
- 1/2 tbsp coriander seeds
- 1/2 tbsp cumin seeds
- 3 garlic cloves
- 1 tsp grated ginger
- 1 tbsp vegetable oil
- 1 tbsp agave syrup
- 1 tbsp tamari sauce
- 500g tofu cubed
Method:
To make the Roasted tofu
- Method
- Toast the coriander and cumin seeds in a dry pan until fragrant
- grind to a powder in a pestle and mortar.
- Add the rest of the marinade ingredients to a blender and puree till smooth.
- Pour over the tofu, stir to combine and marinate for a couple of hours for best results.
- Roast in a hot oven for a good hour or until the tofu gets crispy, turning often (about 10-15 minutes).
- Serve with the sauce.
