Quick and Easy Satay Sauce with Roasted Tofu

This sauce is very easy to make; even our lamest, most awkward Suma Chef, and part-time model, Pastry Paolo was able to make it under my careful instruction.

Ingredients

Satay Sauce

  1. 150g peanut butter
  2. 1 tbsp Tamari soy sauce
  3. 1 tbsp agave syrup
  4. 1 tsp dried chilli flakes
  5. 1 tsp fresh grated ginger
  6. 1 clove garlic (crushed)
  7. 1 tsp Worcester sauce
  8. ½ tbsp olive oil
  9. 1 tbsp fresh chopped corriander
  10. 150ml coconut milk
  11. 1 lime, juiced, with some of the zest added
  12. Salt and Pepper

Method:

To make the satay sauce, simply blend all of the ingredients together, adding the coconut milk, lime juice and seasoning last.

Ingredients:

Roasted Tofu

  1. 1/2 tbsp coriander seeds
  2. 1/2 tbsp cumin seeds
  3. 3 garlic cloves
  4. 1 tsp grated ginger
  5. 1 tbsp vegetable oil
  6. 1 tbsp agave syrup
  7. 1 tbsp tamari sauce
  8. 500g tofu cubed

Method:

To make the Roasted tofu

  1. Method
  2. Toast the coriander and cumin seeds in a dry pan until fragrant
  3. grind to a powder in a pestle and mortar.
  4. Add the rest of the marinade ingredients to a blender and puree till smooth.
  5. Pour over the tofu, stir to combine and marinate for a couple of hours for best results.
  6. Roast in a hot oven for a good hour or until the tofu gets crispy, turning often (about 10-15 minutes).
  7. Serve with the sauce.
