I am a Welsh vegetarian food blogger. My blog began in 2009, when I lived in Scotland. It originally focused on my past two past times: growing my own organic vegetables; and then cooking these fresh, versatile vegetables into delicious plateful of food inspired by the many diverse ‘ethnic’ world cuisines. I was putting vegetables into everything – Rhubarb in curries, courgette and parsnip in cookies, avocado and pumpkin in mousse, spinach and kale in smoothies. yogurt and ice-creams, beetroot and carrot in muesli, butternut squash and beetroot in cakes and much more. My Vegan Beetroot Chocolate Cake with Beetroot Cream and Beetroot Dust came runner up in PeTA Great Vegan Bake Off in 2013. Blogging became more than a hobby, as it allowed me to proactively cook from the many cookbooks on my burgeoning bookshelf, as well as develop my own original recipes. I no longer have an allotment plot as I lost it in a fire in 2010, but I do still make every effort to eat with the seasons and grow what I can in my garden plot and pots, hence the strapline on my blog – A Seasonal Veg Table. The allotment2kitchen blog has become an on-line journal of vegetarian and vegan eats and includes over 1000 recipes.
Since starting my blog, I have returned back home to Wales and have created a number of Welsh recipes including Caerphilly Cheese Pakora Bites aka Bhaji, Vegan Faggots, Welsh Vegetarian Tart, Welsh Rarebit Risotto; Welsh Glamorgan Dog and my popular Fiery Red Dragon and Laverbread Burgers. One of my absolute favourite recipe creations has to be Welsh Laverbread Vegetable Suet Pudding.
