Tasty Italian Themed Nut roast

Nut roasts are healthy and thrifty and don’t take long to make. They are a classic vegetarian staple but are often perceived as a bit boring.   This is my Italian nut roast recipe which is excellent with roasted Mediterranean vegetables, steamed veg or salad.

Ingredients

  1. 250g porridge oats
  2. 200g chopped mixed nuts
  3. 200g  (half a tin) of cannellini or butter beans
  4. 1 finely chopped onion 
  5. 1 clove garlic (optional)
  6. 1 medium egg
  7. 1tsp yeast extract
  8. 100g of your favourite pesto
  9. mozzarella cheese (optional)

Method:

  1. Gently fry the finely chopped onion and garlic until soft.
  2. Meanwhile, put the porridge oats into a bowl and cover with 1/2 pint of boiling water – leave to absorb water for 10 minutes.  Then stir – you should quickly get a thick porridge – add a little  extra boiling water if too dry and difficult to stir.
  3. Stir yeast extract and then egg into porridge mixture.
  4. Mash beans with a fork and add to porridge mixture with chopped nuts and onions.  Finally stir in pesto sauce and cubed mozzarella.
  5. Turn the thick mixture into a well greased oven proof dish and bake in the middle of your oven at Gas mark 6 for 50 minutes.  Allow to stand for at least 20 minutes before carving – nut roast gets firmer as it cools.
  6. All the taste of Italy – enjoy

    How to amend this recipe for vegans?

    Hi Miles,

    I have struggled to get a nutroast to bind satisfactorily without using an egg – and I have tried all sorts of combinations eg millet flakes, rice flakes, bread crumbs, gram flour, mashed beans. The only sensible suggestion I have is to replace the egg with a Vegan Egg Replacer (Allergy care or Orgran make them) which seems to be cheating but does work.

    (If any one has a vegan nutroast recipe that works Id be very interested. )

    Ground flax seeds are often a good binding ingredient instead of egg, you could try using some of them. Nutritious too!

    BTW – 1 Tbsp. ground flax seeds + 3 Tbsp water (or other liquid) = 1 egg
