Fantastic Fairtrade Molasses Tea Loaf

A delivery of Fairtrade Molasses was inspiration enough for Wendy (a Suma customer) to get baking, and use the molasses in her idiot-proof, fat-free tea loaf. She has sent us the recipe to share with you. You can vary the flavour by adding mixed spice/cinnamon/ginger to taste.

Ingredients

  1. 1 lb mixed fruit soaked in 1/2 pt cold tea overnight.
  2. Next day add 3/4lb self raising flour
  3. 1 free range egg
  4. 2 tbs Fairtrade Molasses

Method:

  1. Mix well together
  2. dollop into a 2lb loaf tin
  3. and cook at 170/180 degrees (depending on your oven) for about 1 hour.

This recipe was provided to us by Wendy, who works at a fantastic fair trade shop we supply called Justica in Bolton. Justicia is a not-for-profit company set up in 1985. The company exists to promote the idea of trade justice through practical application.
