Curried Carrot & Sweet Potato Soup

Serves 6

A delicious warming recipe to help fuel you through the wintertime. Carrots and Sweet potato are great sources of both vitamins A and C, which help to strengthen the immune system and keep us healthy.

Ingredients

  1. 900g Carrots
  2. 1 large Sweet Potato
  3. 1 medium onion
  4. 1.4 litres water
  5. 1 tsp curry powder
  6. 1/2 tsp black pepper
  7. 3 cubes bouillon
  8. 1 tsp vegetable oil

Method:

  1. Peel & chop carrots and sweet potato and set aside.
  2. Chop onions and saute in oil in a large pot for 5 minutes or until soft.
  3. Add curry powder & pepper – cook for about 30 seconds to get the spice to release
    its flavours.
  4. Add water and bouillon
  5. Add carrots and sweet potato and bring to a boil. Cook for about 20 minutes until
    veggies are tender.
  6. Transfer to blender and puree until smooth.

    Very nice – would be great to do a pumpkin soup recipe and some other seasonal ones. I still have half a pumpkin left – anyone got some good pumpkin recipes.
