Hodmedods Visit Suma HQ

Hodmedod sources produce from British farms to supply the best ingredients and delicious foods. The team are particularly interested in searching out less well-known foods, like the fava bean – grown in Britain since the Iron Age but now almost forgotten – and black badger peas.

The guys over at Hodmedod’s came to visit us here at Suma HQ last week, giving us a taste of some of their delicious products to try in recipes in our canteen. As you can imagine, they went down a storm! Here’s a recipe the guys gave us to try (along with a juicy image!) If you give it a go, let us know how it went!

Rustic black badger salad
A mouth-watering recipe for a spicy and colourful summer salad of black badger peas. Cooking Tip: When cooking dried black badger peas, it’s worth cooking a large amount. Soak in a large saucepan full overnight, then cook for about 45 minutes. When cool place in freezer bags or tubs and store in the freezer until needed.

Ingredients:

  • 200g Hodmedodds black badger peas, cooked

  • 2 cloves garlic, crushed
  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • Pinch of chilli flakes
  • 50g sun dried tomatoes, chopped
  • Salt and freshly ground pepper
  • Chopped basil
  • Salad leaves to serve

Method:

  1. Put the cooked black badgers in a bowl
  2. add the crushed garlic
  3. chilli flakes oil and lemon juice
  4. Add the other ingredients mix carefully
  5. and place in the fridge so that the flavours develop
  6. Perfect served with crusty bread!
