Ashura – whole wheat grain

This dish is traditionally prepared on the 10th of Muharram (the first month of the Islamic calendar). Whole wheat grains are a good source of complex carbohydrates, various vitamins and minerals and are naturally high in fibre and low in fat. You can eat whole grains plain, add them to other dishes such as soups or stews or use them as ingredients in baked dishes.
1 Place whole wheat grain in an earthenware pot or ceramic container. Cover with 3 times the volume of warm water and leave to rest in a warm place for 4-6 hours.
2 Drain, cover with warm water, then boil over low heat for 10-15 minutes or until it is very soft. Drain again.
3 Dissolve the sugar in the milk. Add the corn flour and butter and pour over the wheat.
4 Return pot to the heat and simmer for 10 minutes on very low. Place in the serving dish to cool.
5 Lightly fry the raisins in the butter, until they puff up. Mix with the nuts and cinnamon and sprinkle over the Ashura.
