Fantastic Fairtrade Molasses Tea Loaf

tea loaf 005 (2)This recipe was provided to us by Wendy, who works at a fantastic fair trade shop we supply called Justica in Bolton. Justicia is a not-for-profit company set up in 1985. The company exists to promote the idea of trade justice through practical application.

A Suma delivery a few days ago of our Fairtrade Molasses was inspiration enough for Wendy to get baking, and use the molasses in her idiot-proof, fat-free tea loaf. She has sent us the recipe to share with you:

Ingredients:

1 lb mixed fruit soaked in 1/2 pt cold tea overnight.
Next day add 3/4lb self raising flour
1 free range egg
2 tbs Fairtrade Molasses

Method:

Mix well together, dollop into a 2lb loaf tin and cook at 170/180 degrees (depending on your oven) for about 1 hour.

You can vary the flavour by adding mixed spice/cinnamon/ginger to taste.

What is Molasses?

Molasses is a thick, dark, sugary syrup which is a byproduct produced when refining sugar cane or sugar beet in to refined white sugar. It is often considered to be a healthier substitute to sugar because of it’s high mineral content, containing iron, magnesium, calcium and copper.
